Crustless Vegetable Quiche

What you will need:

  • Broccoli Florets (about 2 cups)
  • Red Peppers (julienne style, 1 pepper)
  • Ricotta Cheese (about 4oz)
  • Shredded Gouda Cheese (about 8oz)
  • Eggs (3, beaten)
  • Salt 
  • Garlic (1 clove, minced)

How to make it:

Preheat the oven to 350f.  Combine all the ingredients in a large bowl and mix them together.  Use nonstick spray in a round cake pan.  Put the mixture in the cake pan.  Bake uncovered for about 40 minutes or until it’s a light golden brown color.  Remove from heat and allow to cool for about 20 minutes.  Remove from pan, cut and serve.  Prep time is about 10-15 minutes.
